Squid Biriyani

Ingredients 
2 cups basmati rice
250 gm squid
1 tbsp red chili powder
1 tsp turmeric powder
3 tbsp oil
1 tsp crushed ginger
1 tsp crushed garlic
500 gm onions, chopped
8 green chilies , crushed
1 large tomato, cut to pieces
1 tsp coriander powder
1 tsp garam masala
1 tbsps ghee
1" pieces cinnamon
2 cloves
2 cardamoms
Juice of 1 lemon
A few coriander leaves, chopped
Salt – to taste

Preparation 
Wash the rice, drain and keep aside.
Cut the squid to pieces.
Marinate them with a paste of the red chili powder, ½ tsp turmeric powder and salt.
Heat 1 tbsp oil in a pan and half fry the squid pieces.
Heat 1 tbsp oil in a pressure cooker and sauté the ginger, garlic, green chilies and a portion of the onions.
Now add the tomato, ½ tsp turmeric powder, coriander powder, garam masala and salt stirring all the while.
Add half cup of water followed by the squid pieces.
Cover the cooker and cook for a whistle
Heat the ghee and one table spoon oil in another pan and fry the kept aside onion pieces till they turn golden brown. Keep aside.
Stir fry the cinnamon, cloves and cardamom in the remaining oil.
Add in the rice and stir well.
Pour four glasses water and stir after adding salt. Cook till all the water is absorbed.
Combine the lemon juice with the squid masala and mix with the rice.
Cover the pan keep over a low fire for 2-3 minutes.
Transfer the biriyani to a serving plate and garnish with the fried onion pieces and coriander leaves.
